Ingredients:
1/2 cup full-fat coconut milk
1 ripe avocado, pitted and peeled
1 cup fresh spinach leaves
1/2 cup mixed berries (e.g. strawberries, blueberries, raspberries)
1 tbsp chia seeds (optional)
1-2 tbsp low-carb sweetener (optional)
Instructions:
1. Add the coconut milk, avocado, spinach, mixed berries, chia seeds (if using), and low-carb sweetener (if using) to a blender.
2. Blend the ingredients on high speed until the mixture is smooth and creamy.
3. If the smoothie is too thick, add a splash of water or more coconut milk to thin it out to your desired consistency.
4. Split the smoothie between two glasses and dish it up without
delay
