Ingredients: For the salmon:
4 salmon fillets
1 tbsp olive oil
1 tsp dried dill

For the mixed greens salad:
6 cups mixed greens
1/4 cup olive oil

Instructions:
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle the olive oil over the salmon and sprinkle with dried dill, salt, and pepper.
Bake the salmon in the preheated oven for 10-12 minutes, or until it's cooked through.
While the salmon is baking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
Add the spinach to the skillet and sauté for 2-3 minutes, or until it's wilted. Season with salt and pepper.
In a small mixing bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper to make the dressing for the mixed greens salad.
In a large mixing bowl, combine the mixed greens and dressing. Toss well to coat.
Serve the salmon with a side of sautéed spinach and the mixed greens salad on the side.
